Making your own pulled pork sandwiches is a cinch with this simple slow cooker recipe. Sweet barbecue sauce and onions infuse their distinct flavors into pork loin to tenderize the meat to a melt-in-your-mouth texture.

Remove the pork from the sauce to shred then cover with as much of the cooking liquid as desired to keep the pork moist but not soupy.
Ingredients
- 2 Tbsp. vegetable oil
- 1/2 cup(s) chopped onions
- 2 lb. pork loin
- 2 cup(s) barbecue sauce, such as Sweet Baby Ray’s®
- 1/2 cup(s) chicken stock
- 1 pkg. Ciabatta Rolls
Cooking Directions
- Heat oil in large skillet on medium-high heat until hot. Place pork into center of pan and add onions around pork. Sear pork and onions about 5 minutes until pork is browned on all sides and onions have softened.
- Place pork and onions into slow cooker insert. Mix barbecue sauce and chicken stock together; pour over pork. Cook on high heat 3 to 3 1/2 hours or until pork shreds easily with a fork.
