Remove the pork from the sauce to shred then cover with as much of the cooking liquid as desired to keep the pork moist but not soupy.

  1. Heat oil in large skillet on medium-high heat until hot. Place pork into center of pan and add onions around pork. Sear pork and onions about 5 minutes until pork is browned on all sides and onions have softened.
  2. Place pork and onions into slow cooker insert. Mix barbecue sauce and chicken stock together; pour over pork. Cook on high heat 3 to 3 1/2 hours or until pork shreds easily with a fork.
