Beefy Chili Nachos
Have some leftover chili con carne? These nachos are a simple way of putting leftovers to good use and make for a very quick and filling lunch the following day.
- Leftover chili con carne
- Corn or tortilla chips
- Toppings (shredded lettuce, avocados, tomatoes, Monterey Jack or cheddar cheese, sliced pickled jalapeños, sour cream)
- Pre-heat the broiler.
- Arrange a stack of your favorite corn or tortilla chips on a large ovenproof dish or platter. Top with a generous sprinkle of grated cheddar or jack cheese (or a combination). Place under the broiler for 3 to 4 minutes until the cheese is hot and bubbly. Remove from oven.
- Ladle some warm chili con carne over the top and sprinkle with additional grated jack or cheddar cheese, sliced pickled jalapenos, olives, chopped cilantro and sour cream. Serve.
