This Moroccan method of preparing melon really brings the fruit to life.

Ingredients

  • 2 cup(s) red wine
  • 3 whole star anise
  • 1/2 tsp. cloves
  • 1/2 tsp. allspice

Cooking Directions

  1. Preheat oven to 400°. Place cantaloupe in a baking dish. Add red wine, sugar, star anise, cloves and allspice. Sprinkle with brown sugar and dot with butter.
  2. Bake until brown sugar is melted, about 10 to 15 minutes. Remove cantaloupe to a serving dish.
  3. In a saucepan, reduce the liquid until it is a thick syrup. Pour over cantaloupe.
