This Moroccan method of preparing melon really brings the fruit to life.
- 1 cantaloupe melon, peeled, halved, then cut into thirds
- 2 cup(s) red wine
- 1 cup(s) sugar
- 3 whole star anise
- 1/2 tsp. cloves
- 1/2 tsp. allspice
- 6 Tbsp. brown sugar
- 1 Tbsp. butter
- Preheat oven to 400°. Place cantaloupe in a baking dish. Add red wine, sugar, star anise, cloves and allspice. Sprinkle with brown sugar and dot with butter.
- Bake until brown sugar is melted, about 10 to 15 minutes. Remove cantaloupe to a serving dish.
- In a saucepan, reduce the liquid until it is a thick syrup. Pour over cantaloupe.
