Ingredients

  • 4 lb. butternut squash
  • 1/4 tsp. nutmeg

Cooking Directions

  1. Preheat the oven to 425°F.
  2. Toss butternut squash with olive oil and place on a baking sheet.
  3. Roast for 15 minutes.
  4. Turn oven down to 375°F.
  5. Place butternut squash into a mixing bowl.
  6. Add heavy cream, 1/2 cup Parmesan, cheddar, nutmeg, salt and pepper.
  7. Sprinkle the remaining 1/2 cup Parmesan on top of the gratin.
  8. Cover and bake for 25 minutes.
  9. Remove the foil and bake for an additional 10 minutes.
