Perfect for breakfast, this quick-bread is moist and delicate with the sweet flavor of apples and carrots. Also try it layered with cream cheese and sliced fruit or chicken for a satisfying snack or light lunch.
Ingredients
- 2 cup(s) all-purpose flour
- 1 cup(s) crushed Triple Chex® Cereal
- 1 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. ground cinnamon
- 1 tsp. ground ginger
- 4 eggs
- 1 tsp. vanilla extract
- 1 cup(s) buttermilk
- 1/2 cup(s) vegetable oil
- 1 1/4 cup(s) brown sugar
- 2 cup(s) carrots, shredded
- 1 cup(s) walnut pieces
- 1 cup(s) apple, grated
Cooking Directions
- Preheat oven to 350°F. Grease two loaf pans.
- In a large bowl, sift together flour, cereal, baking powder, baking soda, salt, ginger and cinnamon.
- In a separate bowl, combine eggs, buttermilk, vanilla, oil and brown sugar; beat well. Combine egg mixture and flour mixture; mix just until moistened.
- Fold in carrots, walnuts and apples. Pour into loaf pans.
- Bake for 45 to 50 minutes, or until a cake tester inserted in the center comes out clean. Cool on a rack for 10 minutes before serving.
