This is one elegant cookie—chocolaty to the max with a chewy center and a crunchy exterior. No one would ever guess that a breakfast cereal is at the heart of this decadent treat. And their appearance is so appealing, they could easily be packaged up for holiday gifts or served with ice cream for a special dessert.
Ingredients
- 1 cup(s) all-purpose flour
- 1/2 cup(s) Triple Chex® Cereal, crushed
- 1/2 cup(s) unsweetened cocoa powder
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 2 cup(s) semisweet or bittersweet chocolate chips
- 6 Tbsp. butter, softened
- 1 cup(s) white sugar
- 3/4 cup(s) chopped almonds or pecans
- 1/2 cup(s) unsweetened cocoa powder
- 2 large eggs
- 3 1/2 cup(s) confectioners' sugar
Cooking Directions
- Preheat oven to 350°F.
- Combine flour, cereal, cocoa powder, baking powder and salt. Set aside.
- Melt 1 cup of chocolate chips in the microwave in gentle 30-second bursts, stirring each time until the chocolate has liquefied.
- Cream butter and white sugar. Add melted chocolate chips and vanilla.
- Beat in eggs. Add flour mixture, nuts and remaining chocolate chips.
- Wrap in plastic and freeze until firm (about 20 minutes).
- Make mixture into 1-inch balls. Roll in a generous amount of confectioners' sugar. Place on ungreased cookie sheet and bake for 12 to 14 minutes.
- Cool on wire rack. Store well wrapped in the refrigerator.
