Like a good bread pudding, this sweet and hearty dessert really hits the spot on a cold winter night.
Ingredients
Topping
- 2 Tbsp. toasted pecans
- 1/2 tsp. cinnamon
- 1/4 cup(s) brown sugar
Pudding
- 4 cup(s) cooked (8 ounce dry ) Daily Chef™ Elbow Macaroni Pantry Pack
- 1/4 cup(s) butter, melted
- 1 lb. cottage cheese
- 2 cup(s) sour cream
- 1/2 cup(s) sugar
- 4 eggs
- 1 tsp. ground cinnamon
- 1/2 cup(s) Craisins®
- 1 Tbsp. lemon zest
- 1 tsp. vanilla
Cooking Directions
- Preheat oven to 350°F.
- In a food processor, whip together the cottage cheese, 1/4 cup butter and sour cream until smooth. Add vanilla, cinnamon, sugar and lemon zest. Pulse briefly to blend in eggs.
- Transfer to a large bowl and stir in the noodles and Craisins®. Pour into greased 9x13-inch baking dish.
- Combine topping ingredients with reserved tablespoon of melted butter and sprinkle over top of dish. Bake for 30 to 45 minutes or until custard is set and top is puffy and golden brown. Serve immediately with cream or whipped cream.
