Who doesn’t love cranberry muffins? Dried cranberries like Craisins® and pecans are perfect to bring a sweet and nutty fall flavor to this favorite snack.

To serve these muffins as a dessert, split them while still warm and fill with cream cheese and honey.
Ingredients
- 2 eggs
- 1/4 cup(s) milk
- 1/2 cup(s) buttermilk
- 1/2 cup(s) Craisins®
- 1/2 cup(s) vegetable oil
- 1/2 cup(s) sugar
- 1/2 cup(s) pe pieces, toasted
- 2 cup(s) all-purpose flour
- 1 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1 tsp. vanilla
- 1/2 tsp. salt
Cooking Directions
- Preheat oven to 350°F.
- In a large bowl, whip eggs, oil, milk, buttermilk and vanilla together until frothy.
- Combine flour, baking powder, baking soda, sugar and salt together. Stir gently into liquid mixture. Add Craisins and pecan pieces and stir gently - do not over mix.
- Brush muffin tins thoroughly with butter. Pour batter into cups to 2/3 full.
- Bake 30 to 40 minutes or until muffins are light brown and a toothpick or cake tester comes out clean.
