A refreshing warm weather salad to serve with spicy or grilled dishes.

Ingredients

  • 2 seedless cucumbers
  • 2 cup(s) Yoplait® Original Yogurt
  • 2 Tbsp. chopped mint
  • 1 small Serrano or jalapeño chili, minced
  • 1 Tbsp. minced garlic
  • 1 Tbsp. lemon juice
  • salt and pepper

Cooking Directions

  1. Peel and slice cucumbers, then toss lightly with salt. Put in a colander to drain for about 30 minutes.
  2. Combine drained cucumbers and all remaining ingredients, taste for salt and refrigerate. Let rest in refrigerator at least an hour or two before serving.
