These delicious pumpkin cookies are an unexpected way of bringing the flavor of the seasons to your table.
Ingredients
- 3/4 cup(s) vegetable oil
- 1 cup(s) Daily Chef unsalted butter
- 2 cup(s) sugar
- 2 1/2 cup(s) canned pumpkin
- 2 eggs
- 2 tsp. baking soda
- 1 1/2 tsp. ground cinnamon
- 1 tsp. ground ginger
- 1 tsp. salt
- 4 cup(s) all-purpose flour
- 6 Tbsp. Daily Chef butter
- 1/2 cup(s) whole milk
- 1 cup(s) packed brown sugar
- 2 cup(s) confectioners' sugar
- 1 1/2 tsp. vanilla extract
- 3/4 tsp. ground nutmeg
Cooking Directions
- Preheat oven to 350°F.
- Cream butter, oil, sugar and pumpkin. Add eggs and mix well. Sift together the baking soda, cinnamon, ginger, salt and flour. Add to pumpkin mixture and mix well.
- Drop 2 tablespoons of batter at a time from a large spoon (or from a small ice cream scoop) on to a greased cookie sheet. Bake 15 to 18 minutes at 350°F.
- Make frosting while cookies are baking: in a saucepan over medium low heat, warm butter, milk and brown sugar until sugar is dissolved. Cool slightly and whisk in confectioners' sugar, nutmeg and vanilla until creamy.
- Dip warm cookies into frosting to top. Let cool on a rack.
