The sunny taste of the Baja shines in these soft tacos, made with seared, sliced tuna steak and fresh fruit salsa.
Ingredients
- 4 Treasures from the Sea® Ahi Tuna Steaks, thawed
- 8 corn tortillas, warmed
- olive oil
Citrus Vinaigrette
- 3/4 cup(s) orange juice
- 1/4 cup(s) lime juice
- 1/4 cup(s) basil, chopped
- 1/4 cup(s) cilantro, chopped
- 1 Tbsp. honey
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1/2 cup(s) olive oil
Pineapple Pico de Gallo
- 1 cup(s) chopped pineapple, canned or fresh
- 1/2 cup(s) mango, chopped
- 1 Tbsp. cilantro, minced
- 1 Tbsp. red onion, chopped
- 1 Tbsp. lime juice
- 1/4 tsp. salt
Cooking Directions
- Combine citrus vinaigrette ingredients in one bowl and pineapple pico de gallo ingredients in a separate bowl. Set both aside.
- Brush each side of the tuna steaks with olive oil and grill 2 to 3 minutes per side over high heat. Medium Rare - cook 4 minutes total. Medium - cook 5 minutes total. Well - cook 6 minutes total.
- Remove from grill and drizzle with citrus vinaigrette. Let rest about 5 minutes, and then slice the tuna diagonally into 1/4-inch thick slices.
- To assemble tacos, place 2 to 3 slices of tuna on each warmed tortilla and top with pineapple pico de gallo.
