The sunny taste of the Baja shines in these soft tacos, made with seared, sliced tuna steak and fresh fruit salsa.

Ingredients

  • 8 corn tortillas, warmed

Citrus Vinaigrette

  • 3/4 cup(s) orange juice
  • 1/4 cup(s) cilantro, chopped

Pineapple Pico de Gallo

  • 1/2 cup(s) mango, chopped
  • 1 Tbsp. cilantro, minced

Cooking Directions

  1. Combine citrus vinaigrette ingredients in one bowl and pineapple pico de gallo ingredients in a separate bowl. Set both aside.
  2. Brush each side of the tuna steaks with olive oil and grill 2 to 3 minutes per side over high heat. Medium Rare - cook 4 minutes total. Medium - cook 5 minutes total. Well - cook 6 minutes total.
  3. Remove from grill and drizzle with citrus vinaigrette. Let rest about 5 minutes, and then slice the tuna diagonally into 1/4-inch thick slices.
  4. To assemble tacos, place 2 to 3 slices of tuna on each warmed tortilla and top with pineapple pico de gallo.
