Healthy Choice® Chicken Soup with Arugula Salad
Delicious Healthy Choice® Soup and a tossed salad of fresh herbs and avocado with peppery arugula make the perfect soup and salad combination
- 3 can Healthy Choice® Chicken Soup
- 2 cup(s) Hunt’s® Diced Tomatoes, drained
- 3 Tbsp. chopped fresh basil or Italian parsley
- 2 Hass avocado, peeled and diced
- 3 cup(s) arugula or spinach, washed and well-dried
- 1 tsp. minced garlic
- 1/2 tsp. sugar
- 2 tsp. lemon juice
- 1 tsp. Dijon mustard
- 1/2 tsp. black pepper
- 1/2 cup(s) olive oil
- Salt and freshly cracked black pepper
- Heat soup over medium heat in a saucepan until hot, stirring occasionally.
- Serve in standard heat-resistant soup bowls.
- Combine all dressing ingredients in a blender, or whisk in a small bowl, until creamy. May be made up to one day ahead and refrigerated.
- To serve, lightly toss all salad ingredients to blend. Add dressing and toss to coat.
