These pretty little loaves are perfect for holiday gifting.
Ingredients
- 2 eggs
- 1/4 cup(s) milk
- 1/2 cup(s) buttermilk
- 1/2 cup(s) Sun-Maid® Raisins
- 1 cup(s) canned pumpkin
- 1/2 cup(s) vegetable oil
- 1/2 cup(s) sugar
- 1/2 cup(s) walnut pieces, toasted
- 2 cup(s) all-purpose flour
- 1/2 tsp. allspice
- 1/2 tsp. cinnamon
- 1 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1 tsp. vanilla
- 1/2 tsp. salt
Cooking Directions
- Preheat oven to 350°F.
- In a large bowl, whip eggs, oil, milk and buttermilk together until frothy.
- Combine flour, baking powder, spices and sugar in a small bowl. Stir this dry mixture into liquid mixture. Add raisins, pumpkin and walnut pieces. Stir gently—do not over mix.
- Brush 2 small loaf pans with butter and fill three-quarters full.
- Bake 45 to 60 minutes, or until loaves are light brown and a toothpick or cake tester comes out clean.
