Ingredients

  • 3 Tbsp. olive oil
  • 1 1/4 lbs. Member’s Mark® Boneless, Skinless Chicken Breast
  • 3/4 tsp. each salt and pepper
  • 1 Tbsp. garlic, sliced
  • 1 1/2 cups onions, thinly sliced
  • 1 1/2 cups red bell pepper, thinly sliced
  • 1 Tbsp. Italian seasoning
  • 3 Tbsp. balsamic vinegar
  • 1/2 tsp. red chili flakes
  • 8 slices Castle Wood Reserve™ Baby Swiss Slices
  • 4, 12” White Hoagie Rolls

Cooking Directions

  1. Preheat broiler.
  2. Season chicken breasts with salt, pepper and red chili flakes.
  3. Heat olive oil in large frying pan. Add seasoned chicken and garlic. Sauté about 10 minutes or until chicken is browned and cooked through. Remove from pan and set aside
  4. Add onions, bell pepper and Italian seasoning to the pan. Sauté about 8 minutes or until onions are browned.
  5. Add chicken back into the pan, along with the balsamic vinegar. Sauté about 2 minutes to warm through. Slice each breast into 4 to 6 pieces.
  6. Meanwhile, slice hoagie rolls and butter both sides. Put a slice of Swiss cheese on each side and heat under the broiler for 3 to 4 minutes to melt the cheese.
  7. Remove hoagies from the oven and pile each with the sliced chicken and Italian veggies. Serve immediately.
