For even more flavor, toast pine nuts before adding to dish.
- 4 cup(s) broccoli florets
- 1 tsp. grated lemon zest
- 1/4 tsp. salt
- 1 Tbsp. olive oil
- 1 Tbsp. pine nuts
- Place broccoli and 2 tablespoons water in a microwave-safe bowl. Cover with a plate or plastic wrap. Microwave on high 2 to 3 minutes, or until broccoli is cooked through but not mushy.
- Sprinkle lemon zest and salt over broccoli. Drizzle with olive oil. Toss gently.
- Sprinkle with pine nuts before serving.
