This recipe makes a savory dinner simpler than ever. Start cooking the pulled pork in your slow cooker before you leave for work, and come home to a great twist on a traditional Mexican favorite.

Remove the pork from the sauce to shred then cover with as much of the cooking liquid as desired to keep the pork moist but not soupy.
Ingredients
- 1 1/2 lb. pork loin
- 2 1/4 cup(s) salsa, divided
- 1 Tbsp. chili powder
- 1 Tbsp. ground cumin
- 1 Tbsp. brown sugar
- 1/4 tsp. ground cayenne pepper, optional
- 1/2 tsp. salt
- 3 clove(s) garlic, minced
- 12 corn tortillas
- 3 cup(s) shredded lettuce
- 1 1/2 cup(s) shredded cheddar cheese
- 3/4 cup(s) sour cream
Cooking Directions
- Place pork into slow cooker.
- Mix 1 1/2 cups salsa, chili powder, cumin, sugar, pepper, salt and garlic in a small bowl, pour over pork. Cook on low heat setting for 6 hours.
- Remove pork from slow cooker; shred pork using 2 forks. Serve with tortillas, shredded lettuce, cheese, salsa and sour cream.
