Put an exciting spin on Mexican night! Tender pork loin steeps in a blend of spices to deliver an unexpected, savory flavor to a traditional Mexican favorite.

Remove the pork from the sauce to shred then cover with as much of the cooking liquid as desired to keep the pork moist but not soupy.
Ingredients
- 2 Tbsp. canola Oil
- 1 1/2 lb. pork loin
- 2 1/4 cup(s) salsa, divided
- 1 Tbsp. chili powder
- 1 Tbsp. ground cumin
- 1 Tbsp. brown sugar
- 1/4 tsp. ground cayenne pepper, optional
- 1/2 tsp. salt
- 3 clove(s) garlic, minced
- 3 cup(s) shredded lettuce
- 1 medium tomato, diced
- 1 1/2 cup(s) shredded cheddar cheese
- 3/4 cup(s) sour cream
- 12 corn tostada shells
Cooking Directions
- Heat oil over medium-high heat in a large skillet. Brown pork loin on all sides, remove from skillet and place into slow cooker insert.
- Mix 1 1/2 cups salsa, chili powder, cumin, sugar, pepper, salt and garlic in a small bowl. Pour over pork. Cook on low-heat setting for 8 hours.
- Remove pork from slow cooker; shred pork using 2 forks.
- Layer lettuce, meat, tomatoes, cheese and sour cream on each tostada.
