Pecan pie lovers may just feel like they have rediscovered this classic with this recipe - rum and raisins really kick this one up. Try it with peach or vanilla ice cream.
Ingredients
- 1/2 cup(s) Sun-Maid® Raisins
- 2 Tbsp. rum
- 1 cup(s) Karo® syrup
- 2/3 cup(s) light brown sugar
- 1 tsp. nutmeg
- .1 tsp. ground cloves
- 3 eggs, beaten
- cup(s) melted butter
- 1 1/4 cup(s) pe halves
- 9-inch pie shell, purchased or premade deep-dish
Cooking Directions
- Preheat oven to 350°F.
- Prebake pie crust for 5 to 8 minutes to set. Let cool
- In a small saucepan combine raisins, rum and 2 tablespoons water. Bring mixture to a simmer. Reduce heat and simmer uncovered for 2 minutes. Remove from heat and let cool.
- In a large bowl, stir to combine syrup, sugar, cinnamon, nutmeg and cloves. Beat in eggs and melted butter. Stir in pecans and raisin mixture.
- Spoon into pie shell and bake for 50 to 55 minutes, or until center is set.
