Pecan pie lovers may just feel like they have rediscovered this classic with this recipe - rum and raisins really kick this one up. Try it with peach or vanilla ice cream.

Ingredients

  • 2 Tbsp. rum
  • 1 cup(s) Karo® syrup
  • 2/3 cup(s) light brown sugar
  • 1 tsp. nutmeg
  • .1 tsp. ground cloves
  • cup(s) melted butter
  • 1 1/4 cup(s) pe halves
  • 9-inch pie shell, purchased or premade deep-dish

Cooking Directions

  1. Preheat oven to 350°F.
  2. Prebake pie crust for 5 to 8 minutes to set. Let cool
  3. In a small saucepan combine raisins, rum and 2 tablespoons water. Bring mixture to a simmer. Reduce heat and simmer uncovered for 2 minutes. Remove from heat and let cool.
  4. In a large bowl, stir to combine syrup, sugar, cinnamon, nutmeg and cloves. Beat in eggs and melted butter. Stir in pecans and raisin mixture.
  5. Spoon into pie shell and bake for 50 to 55 minutes, or until center is set.
