Salmon BLT

BLT sandwiches are a favorite you can enjoy all year long, and they’re easy to make special by adding something extra between the slices of bread. Salmon is a great addition, adding protein and other nutrients—and lots of flavor, as well.
Ingredients
- 3 Tbsp. mayonnaise
- 1 Tbsp. prepared pesto sauce
- 12 oz. skinless salmon fillet
- Salt and pepper
- 1 Tbsp. olive oil
- 8 slices whole-wheat bread
- 2 tomatoes
- 4 slices bacon
- 4 Bibb lettuce leaves
Cooking Directions
- Combine mayonnaise and pesto in a small bowl; set aside.
- Cut salmon fillet in half lengthwise to form 2 thin salmon fillets, cut fillets in half to form 4 pieces of salmon that are approximately 3/4” thick and rectangular. Season with salt and pepper.
- Heat olive oil in a large skillet or grill pan over medium-high heat. Cook salmon for 3 minutes on each side or until cooked through.
- Spread mayonnaise mixture onto one side of each slice of bread. Place salmon fillets onto coated side of 4 slices, top with tomato, bacon, lettuce and remaining bread slices. Cut sandwiches in half to serve.
