Smoked Sausage and Rice

- 1 pkg. (16 oz.) Hillshire Farm® Smoked Sausage, cut into chunks
- 1 Tbsp. olive oil
- 1/2 cup(s) chopped green bell pepper
- 1/2 cup(s) chopped onion
- 1 clove garlic, minced (optional)
- 1 cup(s) (14 1/2 oz.) diced tomatoes, drained
- 2 cup(s) water
- 1 Tbsp. Cajun seasoning
- 2 cup(s) uncooked rice
- Heat olive oil in a large skillet over medium heat. Add sausage; sauté about 4 minutes. Remove and set aside.
- Add onions, green peppers and garlic, and cook until vegetables are tender (about 5 minutes). Add water, tomatoes and sausage to skillet with seasoning; stir. Bring to a boil.
- Stir in rice; cover. Reduce heat to medium-low, cover and cook 20 minutes or until most of liquid is absorbed. Remove from heat; stir. Let stand covered for 5 minutes. Fluff with fork.
